The Italian word, “Viaggio” translates to “Journey” in English. Viaggio and Viaggio at the Park promise to take its guests on a culinary journey throughout all regions of Italy while still maintaining the familiarity of American dining.
Chef Victor Perdue incorporates the
concept of “fresh” within every culinary
creation that Viaggio offers…..
“I respond to pressure extremely well
and the weight of that gradual, increase
of pressure actually invokes ideas for
innovative, strategic recipes.”
Entering the industry at age eleven,
Perdue happily mopped floors, washed
dishes, and respectfully waited for the
chance to demonstrate his culinary skill.
At age thirteen, preparing pizza-pies and
carrying out prep-cook duties occupied
most of Vic’s time. By the age of twenty,
Perdue rapidly progressed and graduated from culinary school while working two jobs and supporting his family.
Chef Victor Perdue owned and operated Vic’s on Main, held the executive-chef position at Giannotti’s and Carmine’s, and now resides over the two Viaggio locations.
